Bayukbok or Hinagom
The Bicol version of espasol is called bayukbok or hinagom. It is made either from ground glutinous rice or from corn.
The glutinous rice is roasted first before it goes to the grinder. Young coconut meat, sugar, and the optional coconut milk are then added.
These are usually sold in the kakanin section (rice cakes section) of the public market.
